Breakfast Berry Smoothie

1/2 cup Penn Maid Cottage Cheese
1/2 cup 1% Lowfat Milk
1 teaspoon sugar (optional)
1 teaspoon vanilla extract
1/2 cup frozen unsweetened mixed berries or strawberries
In a blender combine cottage cheese, milk, sugar, vanilla, and frozen berries. Blend one minute or until smooth. Serve immediately.
Cheesy Corn Muffins
Serving Size: 1 muffin

1 cup Penn Maid Cottage Cheese
1 cup lowfat milk
2 eggs
1/2 cup Cheddar Cheese, shredded (about 2 oz)
2, 8.5 packages of corn muffin mix
Preheat oven to 400oF. Line muffin tins with paper liners. Combine milk, cottage cheese, and eggs in large bowl. Use electric mixer to blend on medium speed for one to two minutes. Stir in Cheddar cheese, and then stir in corn muffin mix until just blended. Do not over mix. Spoon batter into prepared muffin cups, dividing equally. Bake for 10-13 minutes, or until muffins are light brown on top and tester inserted into center comes out clean. Let muffins cool to room temperature.
Cottage Cheese Omelet with Caramelized Vegetables

INGREDIENTS
2 eggs
1/4 cup red pepper, seeded & diced
1/4 cup green pepper, seeded & diced
1/4 cup onion, diced
3 medium mushrooms, sliced
1/4 cup scallion, shaved fine, divided
1/4 cup Penn Maid Lowfat Cottage Cheese
Salt and pepper, to taste (optional)
Beat eggs in a small bowl and season with salt and pepper.
Heat a small nonstick omelet pan over medium-high heat. Coat lightly with nonstick cooking spray. Add peppers, onion, mushrooms, and half the scallions to the pan and sauté until translucent.
Using a heat-resistant rubber spatula, add the eggs, and gently stir to form an omelet. Reduce the heat, allowing the egg to cook through. Fill omelet with half of the cottage cheese, allowing it to warm though. Fold omelet. Place on a serving plate and garnish with remaining cottage cheese and sliced scallions.
Substitution suggestion: To lower the fat content of the recipe, substitute 4 egg whites for 2 whole eggs and save about 10 grams of total fat and 3 grams of saturated fat.
Egg Sandwich with Cottage Cheese and Grilled Ham

INGREDIENTS
1 Portuguese muffin
2 eggs
Salt and pepper, to taste
2 slices ham
1 teaspoon tartar sauce
1/8 cup iceberg lettuce, shredded
2 Tablespoons Penn Maid Lowfat Cottage Cheese
1/2 teaspoon scallion, shaved fine
Cut the muffin in half with a serrated knife and reserve for toasting.
In a small mixing bowl, whisk eggs, and lightly season with salt and pepper.
Heat a 6-inch nonstick skillet on medium heat. Once the pan is fully heated, lightly spray the pan with a nonstick cooking spray. Place the ham in the pan and cook on both sides until well heated and lightly browned. At the same time, toast the muffin.
Spread a thin coat of tartar sauce over both halves of toasted muffin and top the bottom muffin piece with shredded iceberg lettuce. Once the ham is heated, place on top of the lettuce.
Then begin cooking the eggs by first coating the skillet with nonstick cooking spray. Pour the eggs into the pan and stir with a rubber spatula until half cooked. Add the cottage cheese and scallions and cook thoroughly.
Place the eggs on the prepared muffin. Top with second muffin half. Put together, cut in half, and serve.
Strawberry Parfait
Makes 6 Servings
1 quart strawberries, sliced (fresh or frozen; thaw if frozen before using)
1/4 cup sugar
2/3 cup Penn Maid Cottage Cheese
2 Tbsp Penn Maid Sour Cream
2/3 cup powdered sugar
1/2 tsp rum extract (optional)
1 cup finely crushed shortbread cookies (about 25)
3 Tbsp shaved dark chocolate
6 mint leaves
In medium mixing bowl, combine strawberries and sugar. Cover and refrigerate for one hour.
Combine cottage cheese, sour cream, powdered sugar and rum extract in a medium bowl. Mix well. Set aside.
In 8-ounce parfait glasses, layer the cheese mixure (2 Tbsp) with cookie crumbs and strawberries, in that order. Repeat until parfait glass is full.
Top with shaved chocolate and a mint leaf.
Penn Maid Aerosol Whipped Topping may also be used as a garnish, if desired.
Chill parfaits for 2 hours before serving. |
